Recipe: Carl’s Everyday Entrée Salad
(per person)
1 head of Romaine or 1/2 head of Iceberg lettuce, chopped small, washed, spun and dried (less if big heads)
1/4 cup blue cheese crumbles
1/4 to 1/2 avocado, medium diced
1 tomato, medium diced
1/3 ground lean chicken
1-2 TBSP olive oil
Salt and pepper to taste
- In a large bowl, put the blue cheese crumbles, diced tomato, diced avocado, olive oil, salt and pepper
- Press the ground chicken into a patty in a small non-stick pan and cook using medium heat, flipping half way and chopping into small pieces with a wooden or plastic utensil towards the end
- When just cooked through, pour the chicken, juices and all, into the blue cheese mixture and toss to semi melt
- Add the lettuce, toss, correct seasoning and serve
