Don't have all the ingredients (or the grocery stores are out)? Here are some more ways to pull off this same, simple, delicious dish:
Substitute canned red or white beans for the dried beans (canned beans shorten the prep and cooking time, and are easily scaled to smaller proportions)
Substitute sausage or charcuterie for the smoked ham hock
Go vegetarian and add smoked olive oil (available online from your local Sweetlife Farm....) in place of the meat
Gild the nutritional lily by folding in chopped kale, chard or spinach at the end, and heating just until wilted
