Recipe: Carl’s Everyday Entrée Salad
(per person)
1 head of Romaine or 1/2 head of Iceberg lettuce, chopped small, washed, spun and dried (less if big heads)
1/4 cup blue cheese crumbles
1/4 to 1/2 avocado, medium diced
1 tomato, medium diced
1/3 ground lean chicken
1-2 TBSP olive oil
Salt and pepper to taste
In a large bowl, put the blue cheese crumbles, diced tomato, diced avocado, olive oil, salt and pepper
Press the ground chicken into a patty in a small non-stick pan and cook using medium heat, flipping half way and chopping into small pieces with a wooden or plastic utensil towards the end
When just cooked through, pour the chicken, juices and all, into the blue cheese mixture and toss to semi melt
Add the lettuce, toss, correct seasoning and serve
